
About a decade ago, Kimi, Michelle, and I took a trip down to Santa Barbara to visit Dio while she was attending the university. Kimi had gone to school there as well, so she also knew the area. Dio was a terrific host, and we had such a great time hiking, shopping, and EATING! One of the places Dio & Kimi took us was called The Bagel Cafe. They served up different kinds of bagel delights, but Kimi and Dio recommended their favorite, which consists of bagel, cream cheese, tomato slices, lemon pepper, and cheddar cheese (in that order) broiled to perfection! YUM! Kimi is really good when it comes to asking about ingredients, and she always recreates the dishes at home. That is how I learned how to make it! Dio was shocked when I recently told her that I make it for my family, and we all call it Bagel Cafe!
P.S. If you try this at home, bake it for 8-10 minutes, until the cheese melts, then broil it and watch it like a hawk until the cheese gets a little crispy. Then let it cool a bit, because the tomato and cheese will be like hot lava pouring into your mouth!

Yay! I can count on you to leave me a comment! I love it! I bake them at 350 until the cheese melts (8 to 10 min.), but the key is to then broil the cheese until it's a little crispy! Watch it closely, it'll burn fast!
Well we made it tonight. Blake and I devoured 2 each! I loved the cheese and how juicy they were....yikes my mouth is watering again!! I am going to have to make it for my mom and dad too. HA! Made such an impression we made them again tonight with our salmon. I was out of cheese so had to send Blake to pick some up. He came home with reduced fat cheese....dude...what was he thinking? Or...maybe it was a hint ;)
OH MAN! Reduced fat cheese? But how did it turn out? I use sharp cheddar, but if it tastes okay with reduced fat cheese, maybe I should give it a try!

I looked at your pictures from Eagle Lake. So many great ones I don't even know where to start. Cody and Tanner look like they are thriving. You look beautiful. Eric and Tom are growing fast too.
